Baked Feta Eggs

Creamy baked feta surrounded by spiced tomatoes with eggs poached right in the sauce.

Ingredients
Bell Pepper 1
Canned Tomatoes 1 can, 14 oz
Cream Cheese 4 oz, as feta substitute
Cumin 1 tsp
Eggs 4
Garlic 3 cloves
Olive Oil 2 tbsp
Onion 1 small
Paprika ½ tsp
Salt 1 tsp
Instructions
  1. Preheat oven to 400°F.
  2. Dice onion and bell pepper. Mince garlic.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add onion and bell pepper, cook 6 minutes until soft.
  4. Add garlic, cumin, and paprika. Cook 1 minute.
  5. Add canned tomatoes and salt. Simmer 8 minutes until sauce thickens.
  6. Crumble or nestle a block of feta cheese in the center of the sauce.
  7. Make 4 wells in the sauce around the feta. Crack 1 egg into each well.
  8. Transfer skillet to oven and bake 10–12 minutes until egg whites are set but yolks are still jammy.
  9. Serve immediately with bread.
