Baked Chicken Thighs

Crispy-skinned, juicy baked chicken thighs. More forgiving than breast and more flavourful.

Ingredients
Chicken Thighs 4, bone-in skin-on
Garlic 1 tsp garlic powder
Olive Oil 2 tbsp
Paprika 1 tsp
Salt 1 tsp
Instructions
  1. Take chicken thighs out of the fridge 20 minutes before cooking — cold chicken straight into a hot oven cooks unevenly.
  2. Preheat oven to 425°F.
  3. Pat chicken dry with paper towels — this is the single most important step for crispy skin.
  4. Mix salt, paprika, garlic powder, and olive oil in a small bowl. Rub all over the chicken, getting under the skin if possible.
  5. Place skin-side up on a sheet pan with space between each piece.
  6. Roast 35–40 minutes until skin is deeply golden and crackling, and internal temperature reads 165°F.
  7. Don't cover or tent them — steam will ruin the crispy skin.
  8. Rest 5 minutes before serving.
