Baked Oatmeal

Warm, sliceable baked oatmeal with banana and honey. Meal prep for the whole week.

Ingredients
Baking Powder 1 tsp
Banana 2, ripe
Butter 2 tbsp, melted
Eggs 2
Honey 3 tbsp
Milk 2 cups
Oats 3 cups, rolled
Salt ½ tsp
Instructions
  1. Preheat oven to 375°F. Butter an 8x8 or 9x9 inch baking dish.
  2. Mash 2 ripe bananas in a large bowl. Add eggs, milk, honey, and melted butter. Whisk together.
  3. Add oats, baking powder, cinnamon (if you have it), and salt. Stir until combined.
  4. Fold in any optional add-ins: blueberries, chocolate chips, chopped nuts, or peanut butter.
  5. Pour into prepared baking dish and spread evenly.
  6. Bake 35–40 minutes until set in the center — it shouldn't jiggle when you shake the pan, and the top should be lightly golden.
  7. Let cool 10 minutes before slicing. Serve warm.
  8. Keeps refrigerated for 5 days and reheats beautifully with a splash of milk.
