Banana Pancakes

Fluffy, naturally sweet banana pancakes. The riper the banana the better they taste.

Ingredients
Banana 2 large, very ripe
Butter 2 tbsp, melted
Eggs 2
Flour 1 cup
Maple Syrup for serving
Milk ½ cup
Salt 1 pinch
Instructions
  1. Mash 2 ripe bananas in a large bowl until completely smooth with very few lumps.
  2. Crack in 2 eggs and whisk well.
  3. Add milk, melted butter, and a pinch of salt. Stir.
  4. Add flour and stir until just combined — a few small lumps are fine. Do NOT overmix or the pancakes will be tough.
  5. Let batter rest 3 minutes while you heat the pan.
  6. Heat a non-stick skillet or griddle over medium heat. Brush with a tiny amount of butter.
  7. Pour about ¼ cup batter per pancake. Wait until bubbles form across the entire surface and the edges look set — about 2–3 minutes.
  8. Flip once and cook 1.5 minutes more.
  9. Serve with maple syrup or honey.
