Ingredients
Bell Pepper 1, diced
Cauliflower 1 medium head, cut into small florets
Celery 3 stalks, thinly sliced
Garlic 2 cloves, minced
Italian Seasoning 1 tsp
Kidney Beans 1 can (15 oz), drained and rinsed
Olive Oil 3 tbsp
Onion 1/2 small, finely diced
Pepper 1/4 tsp
Salt 1/2 tsp
Sugar 1 tsp
White Wine Vinegar 1/3 cup
Instructions
  1. Bring a medium pot of salted water to a boil. Add cauliflower florets and blanch for 3-4 minutes until just tender but still with a slight bite. Drain and immediately transfer to a bowl of ice water to stop cooking.
  2. While the cauliflower cools, whisk together the white wine vinegar, olive oil, sugar, Italian seasoning, garlic, salt, and pepper in a small bowl until the sugar dissolves and the dressing is well combined.
  3. Drain the cauliflower thoroughly and pat dry with a clean kitchen towel to remove excess moisture.
  4. In a large mixing bowl, combine the blanched cauliflower, kidney beans, celery, bell pepper, and onion.
  5. Pour the vinaigrette over the salad and toss gently to coat all the ingredients evenly.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld — the longer it sits, the more pickled and flavorful it becomes.
  7. Give the salad a final toss before serving, taste and adjust seasoning with additional salt, pepper, or vinegar as needed, and serve chilled or at room temperature.
