Skillet Mozzarella Chicken with Italian Herbs

Ingredients
Canned Tomatoes 1 can (14.5 oz), crushed
Chicken Breast 4 pieces (about 2 lbs total)
Garlic 4 cloves, minced
Italian Seasoning 2 tsp
Mozzarella 1 cup, shredded
Olive Oil 2 tbsp
Onion 1 medium, diced
Pepper 1/2 tsp
Salt 1 tsp
Sugar 1 tsp
White Wine Vinegar 2 tbsp
Instructions
  1. Pat chicken breasts dry with paper towels and season both sides evenly with salt, pepper, and 1 tsp of the Italian seasoning.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering. Sear the chicken breasts for 4 minutes per side until golden brown, then transfer to a plate.
  3. Reduce heat to medium and add the diced onion to the same skillet. Cook, stirring occasionally, for 3-4 minutes until softened.
  4. Add minced garlic and cook for 1 minute until fragrant, scraping up any browned bits from the bottom of the pan.
  5. Pour in the crushed canned tomatoes and white wine vinegar. Stir in the remaining 1 tsp Italian seasoning and 1 tsp sugar. Season with additional salt and pepper to taste.
  6. Simmer the sauce over medium heat for 5 minutes, stirring occasionally, until it thickens slightly.
  7. Nestle the seared chicken breasts back into the skillet, spooning sauce over the top. Cover and cook over medium-low heat for 8-10 minutes until chicken registers 165°F internally.
  8. Scatter shredded mozzarella evenly over the chicken breasts. Cover the skillet and cook for 2-3 minutes until the mozzarella is fully melted and bubbly.
  9. Remove from heat and let rest for 2 minutes before serving. Spoon extra sauce from the pan over each piece and serve immediately.
