Ingredients
Brown Sugar 2 tbsp
Chocolate Chips 1/2 cup
Cinnamon 1/2 tsp
Honey 1/3 cup
Oats 2 cups
Peanut Butter 3/4 cup
Salt 1/4 tsp
Vanilla Extract 1 tsp
Instructions
  1. In a large mixing bowl, combine the oats, chocolate chips, brown sugar, cinnamon, and salt. Stir until evenly distributed.
  2. Add the peanut butter, honey, and vanilla extract to the dry ingredients.
  3. Mix everything together with a sturdy spatula or your hands until a cohesive, sticky dough forms. If the mixture seems too dry, add honey 1 teaspoon at a time.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for 30 minutes to firm up the mixture — this makes rolling much easier.
  5. Remove the chilled mixture from the refrigerator. Using a tablespoon or small cookie scoop, portion out even amounts of dough.
  6. Roll each portion firmly between your palms to form smooth, compact balls about 1 inch in diameter.
  7. Place the finished bites on a parchment-lined baking sheet or plate in a single layer.
  8. Refrigerate the rolled bites for at least 15 minutes before serving to help them hold their shape.
  9. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 2 months.
