Warm Apple and Brown Sugar Compote Oats

Ingredients
Apple 2 medium, peeled and diced
Brown Sugar 3 tbsp
Butter 1 tbsp
Cinnamon 1 tsp
Honey 1 tbsp
Lemon 1/2, juiced
Milk 1/4 cup
Oats 1 cup
Salt 1/4 tsp
Water 2 cups
Instructions
  1. Bring 2 cups of water to a boil in a medium saucepan over medium-high heat. Stir in the oats and salt, then reduce heat to medium and cook for 5 minutes, stirring occasionally.
  2. Stir in the milk and continue cooking for 2-3 minutes until the oats are creamy and have absorbed most of the liquid. Remove from heat, cover, and set aside.
  3. While the oats cook, melt the butter in a small skillet over medium heat. Add the diced apple and cook for 3 minutes, stirring occasionally, until slightly softened.
  4. Sprinkle the brown sugar and cinnamon over the apples and stir to coat evenly. Cook for another 3-4 minutes until the sugar melts and the apples are tender and caramelized.
  5. Squeeze the lemon juice over the apple compote and stir well, then remove from heat.
  6. Divide the oats between two bowls, spoon the warm apple compote generously over the top, and drizzle each bowl with honey before serving.
