Chicken and Rice

A simple one-pot chicken and rice that cooks together so the rice absorbs all the savoury chicken juices. Minimal washing up, maximum flavour.

Ingredients
Chicken Breast 1.5 lbs (680g)
Garlic 3 cloves, minced
Rice 1 cup, dry
Salt 1 tsp
Instructions
  1. Season chicken breast pieces generously on all sides with salt and garlic powder.
  2. Heat a drizzle of olive oil in a large, deep skillet or pot over medium-high heat.
  3. Add chicken and brown 3 minutes per side — it does not need to be cooked through yet. Remove to a plate.
  4. Add rice to the same pot and stir to coat in the remaining fat. Toast 1 minute.
  5. Add 2 cups water and another pinch of salt. Stir to combine.
  6. Nestle the browned chicken back on top of the rice. Bring to a boil.
  7. Reduce heat to the lowest setting, cover tightly, and simmer 20 minutes.
  8. Check that the chicken has reached 165°F internal temperature and the rice has absorbed all the liquid.
  9. Rest covered for 5 minutes, then fluff the rice and serve.
