Ingredients
Chicken Breast 2 large (about 8 oz each)
Garlic ½ tsp, powder
Olive Oil 1 tbsp
Salt 1 tsp
Instructions
  1. Remove chicken from the fridge 15 minutes before cooking — cold chicken in a hot oven cooks unevenly.
  2. Preheat oven to 400°F.
  3. Pound any very thick parts to an even thickness using a rolling pin or heavy pan. Even thickness is the key to juicy chicken.
  4. Drizzle with olive oil and rub it in. Season both sides generously with salt, a pinch of garlic powder, and black pepper.
  5. Place in a baking dish or on a sheet pan.
  6. Bake 20–25 minutes depending on thickness. Do not go by time alone — use a meat thermometer. Pull at exactly 165°F internal temperature.
  7. Tent with foil and rest 5 minutes before slicing. This rest is non-negotiable — it lets the juices redistribute.
