Heat a small amount of butter in a saucepan over medium heat. Add apple, a pinch of brown sugar, and a pinch of cinnamon. Cook 3–4 minutes, stirring occasionally, until softened and caramelized. Set aside.
In the same pan, bring milk and a pinch of salt to a gentle simmer. Using milk instead of water makes much creamier oatmeal.
Add oats and stir. Cook 4–5 minutes on medium-low heat, stirring frequently, until thick and creamy.
Stir in honey and taste for sweetness.
Spoon into bowls and top generously with the caramelized apples.
Drizzle with maple syrup or a little extra honey to finish.
