Baked Banana Bread

A moist, deeply flavorful banana bread. The darker and more spotted the bananas, the better.

Ingredients
Baking Powder 1.5 tsp
Banana 4, very ripe
Butter ⅓ cup, melted
Eggs 2
Flour 1.75 cups
Honey 3 tbsp
Salt ½ tsp
Instructions
  1. Preheat oven to 350°F. Butter a 9x5 inch loaf pan.
  2. Mash 4 very ripe bananas until smooth. The riper they are, the sweeter and more intensely banana-flavored the bread.
  3. Whisk melted butter into the bananas. Add eggs and whisk. Add honey and stir.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Pour wet ingredients into dry and fold gently until just combined. Small lumps are fine. Overmixing develops gluten and makes the bread tough.
  6. Pour into prepared loaf pan and smooth the top. Optional: press a halved banana on top for presentation.
  7. Bake 60–70 minutes until a toothpick inserted in the center comes out with just a few moist crumbs (not wet batter).
  8. If the top is browning too fast, tent loosely with foil.
  9. Cool in the pan 10 minutes before removing.
