Chicken Stir Fry

A fast, high-heat chicken and vegetable stir fry with garlic and soy sauce. Better than takeout and on the table in 25 minutes.

Ingredients
Bell Pepper 1 large, sliced
Broccoli 2 cups florets
Chicken Breast 1 lb (450g), sliced thin
Garlic 3 cloves, minced
Olive Oil 1 tbsp
Rice 1 cup, dry
Soy Sauce 3 tbsp
Instructions
  1. Slice chicken breast into thin strips, about ¼ inch thick. Thin pieces cook fast and stay juicy.
  2. Cook rice according to package directions.
  3. Heat oil in a wok or large skillet over the HIGHEST heat your stove allows. It must be very hot before anything goes in.
  4. Add chicken in a single layer. Do not stir for 2 minutes — let it sear. Stir and cook 2 more minutes until cooked through. Remove to a plate.
  5. Add broccoli florets to the hot wok. Stir-fry 3 minutes.
  6. Add sliced bell pepper. Stir-fry 2 more minutes.
  7. Add garlic and stir 30 seconds until fragrant.
  8. Return chicken to the wok. Pour in soy sauce. Toss everything together over high heat for 1 minute.
  9. Serve immediately over rice.
