Pat shrimp completely dry — wet shrimp steam instead of sear and won't develop the caramelized crust that makes this dish.
Mix honey, soy sauce, and garlic together. Set aside.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add shrimp in a single layer. Cook 1.5 minutes until pink on the bottom — do not stir. Flip each shrimp and cook 1 more minute. They should be pink and curled into a C. Overcooked shrimp curl into an O.
Pour honey garlic sauce over shrimp. It will bubble and reduce in about 2 minutes. Toss shrimp to coat.
The sauce should turn glossy and cling to every shrimp. If too watery, cook 1 more minute.
Squeeze lemon over everything and serve immediately over rice.
