Baked Mac and Cheese

Creamy stovetop mac and cheese finished under the broiler with a golden breadcrumb crust.

Ingredients
Breadcrumbs ½ cup
Butter 4 tbsp
Cheddar Cheese 2 cups, shredded
Flour 3 tbsp
Milk 2.5 cups
Mozzarella 1 cup, shredded
Pasta 12 oz, elbows or cavatappi
Salt 1.5 tsp
Instructions
  1. Cook pasta until just under al dente — it will finish cooking in the oven. Reserve 1 cup pasta water before draining.
  2. In the same pot, melt butter over medium heat. Whisk in flour and cook 1.5 minutes, stirring constantly. This cooks out the raw flour taste.
  3. Slowly pour in milk, whisking constantly to prevent lumps. Bring to a gentle simmer, whisking until thickened, about 5 minutes.
  4. Remove from heat. Add shredded cheddar and mozzarella in three batches, stirring after each until fully melted. Season with salt.
  5. Add pasta and stir, using pasta water to loosen if too thick.
  6. Pour into a buttered baking dish.
  7. Toss breadcrumbs with a little melted butter and sprinkle over the top.
  8. Broil 3–4 minutes until the top is golden and bubbling. Watch carefully.
