Creamy Mushroom Pasta

Earthy mushrooms in a silky cream sauce tossed with pasta. Rich, fast, and deeply satisfying.

Ingredients
Butter 2 tbsp
Garlic 3 cloves
Heavy Cream 1 cup
Mushrooms 1 lb
Parmesan ½ cup, grated
Pasta 12 oz
Salt 1 tsp
Instructions
  1. Bring a large pot of salted water to boil. Cook pasta until al dente. Reserve 1 cup pasta water before draining.
  2. Slice mushrooms thickly — thin slices will disappear in the sauce.
  3. Melt butter in a large skillet over medium-high heat. Add mushrooms in a single layer. Do NOT stir for 3 minutes — let them brown.
  4. Stir and cook 3 more minutes. Season with salt.
  5. Add minced garlic, cook 1 minute.
  6. Pour in heavy cream, reduce heat to medium, and simmer 4 minutes until slightly thickened.
  7. Add pasta and toss, adding pasta water a splash at a time until sauce coats every strand.
  8. Finish with grated parmesan.
