Creamy Spinach Pasta

Pasta in a creamy, garlicky spinach sauce. Vegetarian comfort food that comes together in 20 minutes.

Ingredients
Butter 2 tbsp
Garlic 4 cloves
Heavy Cream 1 cup
Parmesan ½ cup, grated
Pasta 12 oz
Salt 1 tsp
Spinach 4 cups, fresh
Instructions
  1. Cook pasta in heavily salted water until al dente. Reserve 1 cup pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat.
  3. Add garlic and cook 2 minutes until fragrant but not browned.
  4. Pour in heavy cream and bring to a gentle simmer. Cook 4 minutes until it thickens slightly.
  5. Add spinach in large handfuls, stirring between each until wilted. It will look like a mountain before it cooks down.
  6. Season with salt. Stir in parmesan.
  7. Add drained pasta and toss over medium heat, adding pasta water a splash at a time until the sauce is silky and coats the pasta.
  8. Taste and adjust salt and parmesan.
