Garlic Shrimp Pasta

Succulent shrimp in a light garlic butter sauce over pasta. Elegant enough for guests, fast enough for weeknights.

Ingredients
Butter 3 tbsp
Garlic 5 cloves, minced
Lemon 1, juiced
Olive Oil 2 tbsp
Pasta 12 oz
Salt 1 tsp
Shrimp 1 lb, peeled and deveined
Instructions
  1. Bring salted water to boil and cook pasta to al dente. Reserve ½ cup pasta water before draining.
  2. Pat shrimp dry — wet shrimp steam instead of sear.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Add shrimp in a single layer. Cook 1.5 minutes without touching until pink on the bottom. Flip and cook 1 minute more. The moment they're pink and curled into a C shape, they're done. Immediately transfer to a plate.
  5. Reduce heat to medium. Add butter and garlic to the same pan. Cook 90 seconds until fragrant but not brown.
  6. Add pasta and a splash of pasta water. Toss vigorously.
  7. Return shrimp to pan, squeeze in lemon juice, and toss to coat.
  8. Add another splash of pasta water if the sauce looks dry.
