Baked Sweet Potato

Perfectly fluffy baked sweet potatoes with crispy skins. The simplest side dish you'll ever make.

Ingredients
Butter 2 tbsp
Olive Oil 1 tbsp
Salt ½ tsp
Sweet Potato 4 medium
Instructions
  1. Preheat oven to 425°F.
  2. Scrub sweet potatoes under cold water and dry thoroughly.
  3. Pierce each potato 8–10 times with a fork all the way around — this prevents them from bursting and lets steam escape for fluffier flesh.
  4. Rub each potato with olive oil and a pinch of salt.
  5. Place directly on the oven rack (not a pan) for maximum crispiness. Put a sheet of foil on the rack below to catch drips.
  6. Bake 45–55 minutes depending on size. They're done when a knife slides in with zero resistance and the skin puffs slightly.
  7. Slice open lengthwise and push ends together to fluff. Add butter and serve.
