Ingredients
Avocado 1
Black Beans 1 can, 15 oz
Chili Powder 1 tsp
Cumin 1 tsp
Lime 1
Olive Oil 2 tbsp
Salt 1 tsp
Sweet Potato 2 large
Tortillas 8 small
Instructions
  1. Preheat oven to 425°F. Dice sweet potatoes into ½-inch cubes — small enough to cook through quickly.
  2. Toss sweet potato cubes with olive oil, cumin, chili powder, and salt. Spread on a sheet pan in a single layer.
  3. Roast 20–25 minutes, flipping halfway, until caramelized on the edges and tender inside.
  4. Warm black beans in a small saucepan with a pinch of cumin and salt.
  5. Warm tortillas in a dry skillet 30 seconds per side.
  6. Assemble tacos: sweet potato, black beans, sliced avocado, a squeeze of lime, and hot sauce if desired.
