Coconut Rice

Ingredients
Coconut Milk 1 can, 14 oz
Rice 2 cups, jasmine or long-grain
Salt 1 tsp
Instructions
  1. Rinse rice under cold water until the water runs mostly clear — this removes excess surface starch for separate, fluffy grains.
  2. Combine rinsed rice, full-fat coconut milk, water, and salt in a medium saucepan. Stir once.
  3. Bring to a boil over medium-high heat, stirring once.
  4. Immediately reduce heat to the lowest possible setting. Cover with a tight-fitting lid.
  5. Cook 18 minutes without lifting the lid — the steam inside is doing the work. Lifting the lid releases steam and leads to undercooked rice.
  6. Remove from heat and let steam, still covered, for 5 minutes.
  7. Uncover and fluff with a fork. The rice will be fragrant, slightly sticky, and delicately coconut-flavored.
