Garlic Rice

Fluffy, fragrant rice toasted in garlic and olive oil. Better than plain rice in every way and barely any extra effort.

Ingredients
Garlic 3 cloves, minced
Olive Oil 1 tbsp
Rice 1 cup, dry
Salt ½ tsp
Instructions
  1. Rinse 1 cup rice in a fine-mesh strainer under cold water until the water runs clear — this removes surface starch for fluffier, more separate grains.
  2. Heat olive oil in a medium saucepan over medium heat.
  3. Add minced garlic and cook 1–2 minutes, stirring often, until fragrant and just turning pale gold. Do not let it brown or it will taste bitter.
  4. Add the rinsed rice and stir to coat every grain in the oil. Toast for 1 minute — the rice will smell nutty.
  5. Add 2 cups water and salt. Stir once and bring to a boil.
  6. Reduce heat to the lowest setting. Cover with a tight-fitting lid and simmer 18 minutes. Do not lift the lid.
  7. Remove from heat and let steam, still covered, for 5 minutes.
  8. Fluff with a fork and serve.
