Garlic Roasted Broccoli

Ingredients
Broccoli 1 large head, cut into florets
Garlic 3 cloves, minced
Olive Oil 2 tbsp
Salt ½ tsp
Instructions
  1. Preheat oven to 425°F.
  2. Cut broccoli into florets of roughly equal size — uneven pieces cook unevenly.
  3. Dry the florets with a paper towel. Moisture is the enemy of caramelisation.
  4. Toss with olive oil, minced garlic, and salt in a large bowl until every floret is well coated.
  5. Spread in a single layer on a large baking sheet. Do not crowd — crowding causes steaming instead of roasting. Use two sheets if needed.
  6. Roast 20–22 minutes without stirring until the edges are dark, crispy, and slightly charred. Those charred bits are the best part.
  7. Serve immediately while still hot and crispy.
