Rice Pilaf

Ingredients
Butter 2 tbsp
Rice 1 cup, dry
Salt 1 tsp
Instructions
  1. Melt butter in a medium saucepan over medium heat until foamy.
  2. Add dry rice and stir to coat every grain. Toast in the butter for 2 minutes, stirring constantly, until the rice looks golden and smells nutty.
  3. Add 2 cups water and salt. Stir once and bring to a boil.
  4. Reduce heat to the lowest setting. Cover tightly and simmer 18 minutes. Resist lifting the lid.
  5. Remove from heat and rest, still covered, for 5 minutes — this is what makes the rice fluffy.
  6. Fluff with a fork and serve immediately.
