Honey Roasted Carrots

Sweet, caramelized roasted carrots glazed with honey and butter. The best side dish skeptics will request again.

Ingredients
Butter 1 tbsp
Carrot 2 lbs, medium
Honey 3 tbsp
Olive Oil 2 tbsp
Salt 1 tsp
Instructions
  1. Preheat oven to 425°F.
  2. Peel carrots and cut into even-sized pieces — halve thin carrots lengthwise, quarter thick ones. Even sizes are critical for even cooking.
  3. Toss with olive oil, salt, and half the honey. Spread on a sheet pan in a single layer with space between pieces.
  4. Roast 20 minutes without touching. Then drizzle with remaining honey and dot with butter.
  5. Toss gently (they'll be partly caramelized by now — don't break them) and roast another 10 minutes until deeply golden and tender.
  6. A caramelized, slightly charred edge is the goal. Serve immediately.
