Maple Glazed Shrimp with Corn and Peppers

Ingredients
Bell Pepper 1 large, diced
Corn 1.5 cups, fresh or thawed frozen
Garlic 3 cloves, minced
Hot Sauce 1.5 tbsp
Lime 1, juiced
Maple Syrup 3 tbsp
Olive Oil 2 tbsp
Pepper 0.25 tsp
Salt 0.5 tsp
Shrimp 1.5 lbs, peeled and deveined
Soy Sauce 1 tbsp
Instructions
  1. Pat shrimp dry with paper towels and season evenly with salt and pepper.
  2. In a small bowl, whisk together maple syrup, hot sauce, soy sauce, and lime juice until smooth. Set glaze aside.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
  4. Add corn and diced bell pepper to the skillet. Cook, stirring occasionally, for 4-5 minutes until the corn develops some golden char. Transfer vegetables to a plate.
  5. Add the remaining tablespoon of olive oil to the same skillet. Add minced garlic and cook for 30 seconds until fragrant.
  6. Add shrimp to the skillet in a single layer and cook undisturbed for 1-2 minutes until pink on the bottom, then flip each shrimp.
  7. Pour the maple glaze over the shrimp and cook for another 1-2 minutes, tossing to coat, until shrimp are fully cooked and glaze has thickened slightly.
  8. Return the corn and bell pepper to the skillet and toss everything together over heat for 1 minute until warmed through and well coated in glaze.
  9. Taste and adjust seasoning with additional salt, pepper, or hot sauce as desired. Serve immediately over rice or with crusty bread.
