Ingredients
Cauliflower 1 large head
Cumin ½ tsp
Olive Oil 3 tbsp
Paprika 1 tsp
Salt 1 tsp
Instructions
  1. Preheat oven to 450°F. High heat is essential for caramelization — lower temps will steam rather than roast.
  2. Cut cauliflower into evenly-sized florets, roughly 1.5 inches each. Uneven pieces cook unevenly.
  3. Dry the florets with a paper towel. Moisture is the enemy of browning.
  4. Toss in a large bowl with olive oil, salt, paprika, and cumin until every floret is coated.
  5. Spread on a large sheet pan in a single layer, leaving space between pieces. Crowding causes steaming.
  6. Roast 20 minutes without touching. Then flip each floret and roast another 10–12 minutes until deeply browned on multiple sides.
  7. The darkest, crispiest edges are the best bites.
