Stuffed Bell Peppers

Bell peppers stuffed with seasoned ground beef and rice, baked until tender.

Ingredients
Bell Pepper 4 large
Cheddar Cheese 1 cup, shredded
Chili Powder 1 tsp
Cumin 1 tsp
Garlic 2 cloves
Ground Beef 1 lb
Onion 1 small
Rice 1 cup, cooked
Salt 1.5 tsp
Tomato Sauce 1 cup
Instructions
  1. Preheat oven to 375°F.
  2. Cut tops off bell peppers and remove seeds and membranes. Save the tops — dice them and add to the filling.
  3. Cook ground beef with diced onion, diced pepper tops, garlic, cumin, chili powder, and salt. Brown completely and drain excess fat.
  4. Stir in cooked rice and tomato sauce. Taste and adjust seasoning generously — the filling is going inside the pepper which will dilute the flavor.
  5. Stand peppers upright in a baking dish. Pack filling tightly into each pepper. Top each with shredded cheddar.
  6. Add ¼ cup water to the bottom of the baking dish — this steams the peppers from below and prevents burning.
  7. Cover with foil and bake 30 minutes. Remove foil and bake another 10–15 minutes until peppers are tender and cheese is golden.
