Tuna Pasta Salad

A cold tuna and pasta salad dressed in Greek yogurt. Perfect for meal prep.

Ingredients
Celery 2 stalks, diced
Dijon Mustard 1 tbsp
Greek Yogurt ½ cup
Lemon 1, juiced
Onion ¼, finely diced
Pasta 12 oz, rotini or penne
Salt 1 tsp
Tuna 2 cans, 5 oz each
Instructions
  1. Cook pasta until al dente, then rinse under cold water and drain completely.
  2. Drain tuna well — press with a fork to squeeze out liquid.
  3. In a large bowl, mix Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth. Taste — it should be tangy and creamy.
  4. Add pasta, tuna, diced celery, and diced onion. Toss gently to coat.
  5. Taste and adjust — more lemon, more salt, or more mustard.
  6. Refrigerate 20 minutes before serving for the best flavor — the pasta absorbs the dressing.
  7. Keeps in the fridge for 3 days. Stir before serving and add a fresh squeeze of lemon.
