Avocado Toast

Ingredients
Avocado 2 ripe
Bread 4 slices, thick
Garlic 1 clove, optional
Lemon 1, juiced
Olive Oil drizzle
Salt ½ tsp
Instructions
  1. Toast your bread until it's deeply golden and sturdy enough to hold toppings. Floppy toast is the enemy.
  2. While the toast is still hot, rub the surface with the cut side of a garlic clove if you like that flavor.
  3. Halve and pit the avocados. Scoop the flesh into a bowl.
  4. Add lemon juice and salt. Mash with a fork to your preferred texture — some like it chunky, some like it smooth. Either is correct.
  5. Taste and add more lemon or salt as needed. The lemon keeps it from browning and brightens the flavor.
  6. Spread thickly onto toast and finish with a crack of black pepper.
  7. Optional additions that are all great: a fried egg on top, red pepper flakes, everything bagel seasoning, or a drizzle of olive oil.
