Cheesy Cauliflower Soup

Ingredients
Butter 2 tbsp
Cauliflower 1 large head
Cheddar Cheese 2 cups, shredded
Chicken Broth 4 cups
Garlic 3 cloves
Heavy Cream ½ cup
Onion 1 medium
Salt 1.5 tsp
Instructions
  1. Melt butter in a large pot over medium heat. Add diced onion and cook 7 minutes until soft.
  2. Add garlic and cook 1 minute.
  3. Add cauliflower florets and chicken broth. Bring to a boil.
  4. Reduce heat and simmer 20 minutes until cauliflower is completely tender — a fork should offer zero resistance.
  5. Using an immersion blender, blend until completely smooth.
  6. Stir in heavy cream and bring back to a gentle simmer.
  7. Remove from heat. Add shredded cheddar in three batches, stirring after each until fully melted. Don't boil after adding cheese — it can turn grainy.
  8. Season generously with salt. Taste.
  9. Serve with crusty bread and extra shredded cheddar on top.
