Creamy Corn Chowder

Thick, sweet corn chowder with bacon and potatoes. Summer in a bowl.

Ingredients
Bacon 4 strips
Canned Corn 2 cans, 15 oz each
Chicken Broth 4 cups
Garlic 2 cloves
Heavy Cream ½ cup
Onion 1 medium
Potatoes 1.5 lbs
Salt 1.5 tsp
Instructions
  1. Cook diced bacon in a large pot over medium heat until crispy. Remove with a slotted spoon, leave fat.
  2. Add diced onion to bacon fat, cook 5 minutes until soft. Add garlic, cook 1 minute.
  3. Add diced potatoes and corn (drained). Stir to coat.
  4. Pour in chicken broth. Bring to boil. Simmer 15 minutes until potatoes are tender.
  5. Use a potato masher to crush about ⅓ of the mixture — this thickens the chowder naturally while keeping texture.
  6. Stir in heavy cream and salt. Simmer 5 more minutes.
  7. If too thick, add more broth. If too thin, simmer another 10 minutes.
  8. Top with crispy bacon and serve hot.
