Roasted Bell Peppers

Sweet, silky roasted bell peppers with lightly charred edges. Great as a side, on sandwiches, in pasta, or straight from the pan.

Ingredients
Bell Pepper 4 large (mixed colours)
Olive Oil 2 tbsp
Salt ½ tsp
Instructions
  1. Preheat oven to 450°F. High heat is essential — lower temps make them soggy.
  2. Slice peppers in half lengthwise. Remove stems, seeds, and white pith.
  3. Cut into wide strips or leave as halves.
  4. Toss with olive oil and salt until fully coated.
  5. Spread skin-side up on a baking sheet in a single layer.
  6. Roast 25–30 minutes until the skins are deeply charred and blistered and the flesh is tender and sweet.
  7. For easy peeling: while still hot, place in a bowl and cover tightly with plastic wrap for 10 minutes. The steam loosens the skins. Peel and discard.
  8. Serve warm or at room temperature.
