Brown Sugar Glazed Salmon

Salmon with a sweet brown sugar and soy crust that caramelizes into something incredible.

Ingredients
Brown Sugar 2 tbsp
Butter 2 tbsp
Garlic 1 clove, minced
Olive Oil 1 tsp
Salmon 2 fillets, 6 oz each
Soy Sauce 1 tbsp
Instructions
  1. Pat salmon fillets completely dry — the glaze will not stick or caramelize on wet fish.
  2. Mix brown sugar, soy sauce, and garlic into a thick paste.
  3. Press the paste firmly onto the top (flesh side) of the salmon. It should form a crust about ⅛ inch thick.
  4. Heat an oven-safe skillet over medium-high heat. Add olive oil.
  5. Place salmon sugar-side DOWN first. Cook 2 minutes until the crust caramelizes to a deep mahogany — watch closely as the sugar can burn fast.
  6. Carefully flip. Add 2 tbsp butter to the pan and tilt to baste the salmon continuously for 3 minutes.
  7. Transfer to a 400°F oven for 4–6 minutes until salmon flakes with gentle pressure.
  8. Rest 2 minutes. The crust will harden slightly into a proper glaze as it cools.
