Sesame Ginger Noodles

Cold sesame noodles with a punchy ginger-soy dressing. Great packed for lunch.

Ingredients
Garlic 2 cloves, minced
Honey 1 tbsp
Lime 1, juiced
Pasta 12 oz
Peanut Butter ⅓ cup
Sesame Oil 2 tbsp
Soy Sauce 3 tbsp
Instructions
  1. Cook noodles (pasta works perfectly) until al dente. Drain and rinse immediately under cold water to stop cooking and cool them down. Toss with a splash of sesame oil to prevent sticking.
  2. Make dressing: whisk together peanut butter, soy sauce, sesame oil, garlic, a small amount of grated ginger, honey, and lime juice. Add warm water 1 tablespoon at a time until pourable. Taste — adjust with soy for saltiness, honey for sweetness, lime for brightness.
  3. Toss cold noodles with dressing until every strand is coated.
  4. If too thick, add more water or a splash of soy sauce.
  5. Serve cold or at room temperature. Topped with anything crunchy makes them better.
