Banana Oat Breakfast Cookies

Three-ingredient breakfast cookies. No sugar, no butter, naturally sweet from ripe bananas.

Ingredients
Banana 3, very ripe
Honey 1 tbsp
Oats 2 cups, rolled
Instructions
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Mash 3 very ripe bananas (lots of brown spots) until completely smooth. Riper = sweeter.
  3. Add oats and mix until combined. The mixture will be sticky and thick.
  4. Optional add-ins that make these better: 2 tbsp peanut butter, a handful of chocolate chips, a dash of cinnamon, or raisins.
  5. Drop rounded spoonfuls onto the prepared baking sheet. Flatten each one slightly with the back of a wet spoon — they won't spread on their own.
  6. Bake 12–15 minutes until set and lightly golden on the edges. They firm up as they cool.
  7. Eat within 3 days or freeze in a zip bag for up to 3 months.
